Apple does not allow users to update to an iOS version that is not signed. However, Apple has left an option open for Administrators to delay the updates for testing purposes. If you want to update your iOS device to a particular firmware version that is no longer signed, you'll need a special configuration profile called 'Delay OTA Profile' for your iPhone, iPad or iPod Touch. OTA Delayed updates have a 90 day period, starting from when it is first unsigned until it is completely dropped. Installing 'Delay OTA Profiles' do not jailbreak your device or modify its system files. It only changes the settings for OTA updates. You can remove the profile at any time from the Settings App.
